In a large pot, place all the igredients in order.
Bring pot to a boil. Skim off foam on the top. Turn the heat down to a simmer and continue cooking for 3-4 hours.
After cooking put stock through a fine sieve. Allow the stock to cool completey.
Store in freezer, divided for individual use. Makes 7 pints. |
| 1/2 head of garlic, unpeeled and bashed |
| 5 sticks celery, chopped |
| 2 medium leeks, chopped |
| 2 medium onions, chopped |
| 2 large carrots, chopped |
| 3 bay leaves |
| 2 sprigs fresh rosemary |
| 5 sprigs fresh parsley |
| 5 sprigs fresh thyme |
| 5 whole black peppercorns |
| 10 1/2 pints cold water |

| 6 pounds beef soup bones |
Broil your beef bones with onion, cellery and carrot in a 450 F oven for an hour. Turning occasionally.
Drain any fat from broiling dish. Then place beef bone and vegetables in a large pot along with any bits on the broiling dish.
Add the rest of the ingredients in order to the pot. Bring to a boil. Then reduce heat to a simmer and continue simmering for 5 hours.
Put stock through a fine sieve discarding bone and vegetables.
Let cool completely and store in
freezer. |

| 1/2 cup cubed potatoes |
| 8 whole black peppercorns |

| 2 tsps dried thyme |
| 2 cloves garlic |
| 12 cups water |

| 3 tbsps. olive oil |
In a large pot heat oil. Reduce heat then add parsnip, leeks, celery, carrot, fennel, and mushrooms. Add fish bones.
Cook on low for 5 minutes, stirring occasionally.
Add wine and bring to a simmer. Then add all the herbs and cold water to cover.
Bring to a simmer and skim off any foam on top, and continue to simmer for 45 minutes. Do not boil.
Pour stock through a fine sieve, discard bones and herbs and vegetables. Immediately place stock in an ice bath.
Skim off fat that rises to the top. Freeze in containers.
